The Story Behind Gutab with Pumpkin
Pumpkin qutab emerged as a seasonal variation of the traditional flatbread, taking advantage of the autumn pumpkin harvest. The natural sweetness of the pumpkin creates a unique sweet-savory balance that sets it apart from herb and meat versions.
In some regions, the pumpkin is sweetened with sugar and cinnamon, making it almost a dessert. In others, it is seasoned with cumin and black pepper for a fully savory interpretation.
This variation demonstrates the versatility of the qutab format and the Azerbaijani tradition of adapting staple dishes to the seasons.
