A boldly spiced cheese spread of Topfen and butter blended with paprika, onions, capers, and caraway — the essential Austrian Heuriger appetizer.

Ingredients

  • 250g Topfen (quark)
  • 60g soft butter
  • 2 tbsp sweet paprika
  • 1 small onion, very finely diced
  • 2 tbsp capers, chopped
  • 1 tsp caraway seeds
  • 1 tsp Dijon mustard
  • 2 tbsp fresh chives, chopped
  • Salt, pepper
  • Crusty bread or pretzel for serving

Instructions

  1. 1 Mix Topfen and softened butter until smooth and creamy.
  2. 2 Stir in paprika, onion, capers, caraway seeds, and mustard until evenly combined.
  3. 3 Season with salt and pepper. Fold in half the chives.
  4. 4 Refrigerate at least 30 min for flavors to meld.
  5. 5 Mound onto a plate or into a small bowl. Sprinkle with remaining chives and a dusting of paprika.
  6. 6 Serve with sliced dark bread, pretzels, or radishes at the Heuriger table.
