Ingredients

  • 2 thick slices sourdough bread
  • 2 ripe avocados
  • Juice of 1 lime
  • 2 eggs
  • 1 tsp chilli flakes
  • Flaky sea salt
  • Freshly cracked black pepper
  • 1 tbsp extra-virgin olive oil
  • Fresh coriander (optional)
  • 1 tbsp white vinegar (for poaching)

Instructions

  1. 1 Toast sourdough slices until golden and crisp.
  2. 2 Halve avocados, scoop into a bowl. Add lime juice, salt, and pepper. Smash roughly with a fork — keep it chunky.
  3. 3 Bring a saucepan of water to a gentle simmer, add vinegar. Create a vortex and carefully slide in each egg. Poach for 3 min.
  4. 4 Pile smashed avocado generously onto each toast.
  5. 5 Place a poached egg on top of each. Season with flaky salt, cracked pepper, and chilli flakes.
  6. 6 Drizzle with olive oil and scatter with coriander if desired.
