Cook onions in oil on one side of the grill, stirring occasionally, until deeply caramelised (15-20 min).

The Story Behind Democracy Sausage
The sausage sizzle evolved from post-war community fundraising barbecues held outside schools, hardware stores, and sporting clubs. When volunteers began setting up sizzles at polling stations on election day, the "democracy sausage" was born — now an inseparable part of Australian democratic culture. In 2016 the Macquarie Dictionary added "democracy sausage" as an official entry.
