Golden Gaytime Ice Cream

A toffee and vanilla ice cream bar dipped in chocolate and coated in crunchy honeycomb-biscuit crumbs — Australia's most iconic ice cream bar.

Ingredients

  • 2 cups vanilla ice cream, softened
  • 2 cups toffee or butterscotch ice cream, softened
  • 200g milk chocolate
  • 2 tbsp coconut oil
  • 1 cup crushed biscuit crumbs (malt or digestive)
  • 1/4 cup honeycomb pieces, finely crushed

Instructions

  1. 1 Line a loaf pan with plastic wrap. Spread vanilla ice cream in an even layer. Freeze 30 min.
  2. 2 Spread toffee ice cream on top. Insert popsicle sticks and freeze until solid (at least 4 hours).
  3. 3 Mix crushed biscuits and honeycomb pieces on a plate.
  4. 4 Melt chocolate with coconut oil until smooth.
  5. 5 Cut the ice cream block into 8 bars. Working quickly, dip each bar in chocolate.
  6. 6 Immediately roll in the biscuit-honeycomb crumb mixture. Return to freezer to set.
