Line a loaf pan with plastic wrap. Spread vanilla ice cream in an even layer. Freeze 30 min.

Spread toffee ice cream on top. Insert popsicle sticks and freeze until solid (at least 4 hours).

Mix crushed biscuits and honeycomb pieces on a plate.

Melt chocolate with coconut oil until smooth.

Cut the ice cream block into 8 bars. Working quickly, dip each bar in chocolate.

Immediately roll in the biscuit-honeycomb crumb mixture. Return to freezer to set.

First produced by Streets ice cream in 1959, the Golden Gaytime became an Australian cultural icon. Its distinctive combination of toffee ice cream, chocolate, and crunchy biscuit crumbs has never been successfully replicated by competitors. Despite its name raising eyebrows internationally, Australians are fiercely protective of it, and Streets has confirmed the name will never change.
