A light yet flavor-packed soup of fresh fish, tomatoes, onions, and cilantro, sharpened with lemon and a touch of palm oil. The everyday soup of Angola's coast.
Ingredients
500g white fish fillets, cut into chunks
2 onions, diced
3 tomatoes, diced
3 cloves garlic, minced
1 tbsp palm oil
Juice of 1 lemon
1 liter fish stock or water
Fresh cilantro, chopped
Salt and pepper
1 hot pepper (optional)
Instructions
1Heat palm oil in a pot. Saute onions and garlic until translucent.
2Add tomatoes and cook 5 minutes until saucy.
3Pour in fish stock. Bring to a simmer.
4Add fish chunks and optional hot pepper. Cook gently 10 minutes.
5Stir in lemon juice and fresh cilantro. Season with salt and pepper.
6Serve hot in bowls with crusty bread on the side.
