Banana Assada

Roasted Plantain

Ripe plantains halved and roasted until deeply caramelized on the outside while soft and sweet within. A universal Angolan side dish and snack.

Ingredients

  • 4 ripe plantains
  • 1 tbsp vegetable oil
  • Pinch of salt

Instructions

  1. 1 Preheat oven to 200C or prepare a charcoal grill.
  2. 2 Peel plantains and halve lengthwise. Brush lightly with oil.
  3. 3 Place on a baking tray or directly on the grill.
  4. 4 Roast 10-12 minutes per side until deep golden brown and caramelized.
  5. 5 Sprinkle with a tiny pinch of salt. Serve warm.
